Cooked in a crock-pot with
assorted roots .. that grow underground. It's for times
that require high-quality nutrition .. the kind that only Mother Earth can
provide.
Got the recipe from a Psych prof
(Dr. Ferguson, a practicing Clinical psychologist),
who claims that nutrition has a greater effect on the mind, & psychological well-being,
than most people give it credit for.
The doctor advocated starting your day
with a bowl of
root-rich stew .. instead of
coffee & donuts .. saying, "If you get nothing else from this course, this
bit of advice
alone is worth the cost of tuition."
"If people would
follow this simple advice," he said, "I wouldn't have half the
clients
I do now."
Freshness is more important than the actual ingredients. It's best to
make the stew
the same day that you buy the ingredients .. at night, before bed. Wake to a house
full of
yummy aroma.
First thing most people say after having a bite is, "I feel
better already." The stew
seems to have a grounding effect (roots) .. especially on frazzled filmmakers.
=)
Wendy lives on this
stuff during the semester.
She says it makes a noticeable difference
on her energy level. We feed it to our actors & actresses on shoot
days. It helps them
deliver their best performances.

* Turn crock on High
(most have High/Low setting) and add 1 cup water
* Add 14-oz can whole, peeled tomatoes - cut in half
* While the crock & tomatoes are heating, cut 1.5 lbs meat. Yummiest is rib meat,
with
bones. Big chunks are classy. Brown in a pan w/ oil, garlic & a
little onion. I like to add
some Chef Paul Prudhomme's Meat Magic while browning. While meat is
simmering on
low heat, cut & add to crock:
* 2 medium Yukon Gold potatoes
(taters usually cook the slowest, so add first)
* 1 large beet
* 3 carrots (skinnier better than fat ones)
* 2 medium onions
* 3 cloves garlic, sliced thin
* 2 green onions/scallions
* 2 celery stalks
* half-cup chopped red/purple cabbage
* 2 jalapenos, no seeds
* 2 dozen green beans
* fresh basil
* 1/2 cup chopped parsley
* 1/2 shot-glass olive oil
Add meat to crock. If you go to bed right away, set heat to Low. We don't like our stew
over-cooked. If you can watch it, set to High until it starts boiling, then stir & set to
Low for 3-4 hours. You can cook up to 6 hrs on low. It will continue even after you turn
off the heat. Don't
over-cook.
In bowl -> 2 pinches salt, 2 dashes Tabasco, splash olive oil. Feel the love (grounding)
that comes from things grown in Mother Earth (roots). The flavor improves with each
day.
